I'm not going to have a Frugal Friday post this week because I forgot to keep track of things. However, I thought I would share some of the frugal meals and food that we have had lately.
We start off with me cooking up about 2 pounds of elk burger into taco seasoned meat. This is what I did with it.
Taco salad made with .50 sale priced bagged salad, tomatoes from the garden, taco meat, crushed tortilla chips and Thousand Island dressing. |
Burritos with taco meat and cheese, Mexican rice made with tomato powder from our tomatoes last year and served with watermelon and blueberries. |
Taco meat and cheese served over the leftover rice served with a side of grapes. |
Squash from the garden sauteed with shrimp. |
Mashed red potatoes with parsley from the garden, tomatoes from the garden, marinated elk steaks and onion rings. |
Zucchini with parmesan cheese and sausages. |
Baked chicken and potatoes. And lastly something sweet... |

That's three little cuties you have there in that first photo! All your food looks delicious, but the banana bread made me want to get up and bake. Thanks for the inspiration to cook. It's so hard getting going in this late summer heat.
ReplyDeleteAwwww...thank you! Those are my grandboys. I need to get a more recent picture added since the baby is now a toddler. :) It is hard to cook when it is so hot.

ReplyDeleteHope the weather has improved some for you. It's horribly smokey here but not as hot. I had a fun visit with a cousin and his wife on Saturday and church on Sunday together.

You are more than welcome SJ. Sometimes I freeze half of it for another meal or two. I just pulled some pulled pork that I cooked up about 2 months ago out of the freezer to use tonight.

DeleteI love that you are just like me when it comes to planning menus!! I do the same with taco meat, I cook double what I need and freeze half for another meal. I don't think I've ever tried elk, though!

That is funny that your daughter is making banana bread as you replied to this post. :) I always freeze overripe bananas if I can't get to making banana bread right away so I always have a nice supply in the freezer too. Enjoy!!!

ReplyDeleteI have been canning and freezing food like crazy. Yesterday, I did 7 more quarts of peaches, bringing my total up to 21 quarts and 10 pints. I think there are 7 more quarts that I will need to finish today and then be done with that project. Then, there is a box of apples to sauce, and that big bucket of tomatoes....and on it goes. This is seriously one of my favorite times of year, since I love canning. I will admit, though, that I'm getting pretty tired.
We have the kids today, so I need to do most of what I need to do early this morning, or tonight. We will start the day down at the YMCA pool with them. The day just goes so much better with Mr. Jake if we wear him out a bit first, then we just end up feeding him all day long. I am wondering if he would like to make some zucchini muffins with me, since now he eats those all day long and he has finished all I had. I'm delighted, since he is such a picky eater, and is so small for his age--it's a great goal for the day--feed the boy!
I hope the smoke is going to clear out there. The maps on the news don't look too great, though. Around here, the temperature was 10 degrees cooler than they expected because there is so much smoke. It's not pleasant, but still I think it's better than over there where you are. Lay low if you can:)

ReplyDeleteHaving a better day today after my meltdown yesterday. Just too tired. And sad that MrDog had to go to the vet again. Two pills later for MrDog and he's knocking around his toys and is his cheery self.
Hope you're ok in the smoke and heat! Both are supposed to break here tomorrow (Wed.). Hope that forecast holds.

I still have quite a bit of venison in the freezer, but no elk. I've never eaten elk, but you make it sound delicious. Hope you are doing well.
