I use 3-cup rectangular glass containers to hold two portions of a main dish. Or use those same containers to each hold one complete meal of, say, meat, mashed potatoes and vegetable. Cuts down on takeout or eating out. This week we had taco salad and chili dogs. This weekend we are making turkey, I'm trying out a slow cooker stuffing recipe, and other sides. I love seeing what other ladies make - meals that the family will actually eat, and love! I generally take one type of meat each week, and plan my meals around it. I make a large roast beef, or a large chicken, or a large pan of hamburger meat, and then plan most of my meals around that one large piece of meat for several days. For example, I made spaghetti last night, and made enough sauce so that I can also make lasagna with it as well tonight. I like to cook once and eat twice. I like the way...Debbie, your meals look delicious! I like the way you stretch out your meals with sides like cantaloupe. Don't you just love potatoes- you can do so much with them. They are my favorite veggie! :)<br />Our meals this week are somewhat quick and simple: Crockpot Chicken Thighs with sides, French Toast, Homemade Lo Mein, Burgers and Italian Sausages with sides. I was going to make chicken pot pie but I have some leftover pork from last week that I had cooked in the crock pot, so I may change that to pork pot pie instead so the pork gets used up. Or I may see what leftover veggies I have sitting in the fridge from the last several days and make a pork stew.
