Dinner Anyone?

   I love looking at pictures of what people are having for dinner.  I get in a rut and tend to fix the same things over and over again.  Sometimes I just need a virtual "push" and inspiration to shake things up a bit.  There are some lovely ladies out there with wonderful blogs that I visit time and time again because they share mouthwatering pictures and recipes.  So here are a few of our meals lately:



   I made an herb and garlic pork roast with roasted potatoes, onions and carrots.  We had this for 2 meals.  I then took some of the leftover sliced pork and made chow mein with lots of veggies and the thinly sliced pork.  This gave us another 2 complete meals.


 

   Another night I oven roasted some beer brats and some homemade potato wedges.  This was served with fresh cantaloupe.  I had some leftover beer brats so I made a pasta dish with them and some veggies.  Very easy and yummy!  This gave use 2 different meals.



      I'm trying to use up things in my pantry.  I found a box of Suddenly Salad in the Ranch Flavor.  I cooked that up and added some broccoli and precooked honey bourbon barbecued chicken to it along with some mayo and other seasonings.  This was served with Italian bread with butter and melted parmesan cheese.  The salad gave us a nice dinner and yielded enough leftovers for 3 more servings.



    We were given some salmon.  I wanted to make a nice dinner to serve out on our back screened in porch since the weather was so warm.  I also had half of a red pepper left so I thought I would use that up.  I baked the salmon, along with the red pepper and then served it with some wild rice mix that I got on sale combined with a coupon for under a dollar.  I would love to say we had leftovers but it was so good that we finished it all off. 

   I would love to know what some of the meals you have been having are and how you stretch your budget and remake your leftovers into something scrumptious and new.  I'm running out of ideas here. ;)

  1. Debbie, your meals look delicious! I like the way you stretch out your meals with sides like cantaloupe. Don't you just love potatoes- you can do so much with them. They are my favorite veggie! :)
    Our meals this week are somewhat quick and simple: Crockpot Chicken Thighs with sides, French Toast, Homemade Lo Mein, Burgers and Italian Sausages with sides. I was going to make chicken pot pie but I have some leftover pork from last week that I had cooked in the crock pot, so I may change that to pork pot pie instead so the pork gets used up. Or I may see what leftover veggies I have sitting in the fridge from the last several days and make a pork stew. I like using up leftovers to make something else- it's kind of like a free meal! :)

    1. Your meals sound good too Dawn...thanks for sharing. I think a pork potpie would be really good! I may have to throw some chicken in the crockpot. We have not done Shoyu chicken for awhile....hmmm. I hope you have a great week as week as well! :)

  3. Debbie it all looks yummy. I love how you can fix pork loin, and how far it goes!

    2 nights ago I made homemade chili mac (like steak & shake) and it was so good. Last night I took what was left and threw it together and added chopped peppers and cheese and made a casserole out of it.

    We use up everything some how.

    1. Cheryl, that sounds so good! I may have to put that on the menu next week here also. My hubby is not a huge chili fan but if I add macaroni to it, he enjoys it more. :)

  4. Loved this post! I too like seeing what people had for dinner. The pork roast meal looks super yummy, I'm wanting that now and it's 7:45 am! :-) The wild rice looks good too, I've been working on a wild rice pilaf recipe. Great minds think alike!

  5. Thank you for sharing ideas of what happens in your good cooking kitchen! I love seeing what other ladies make - meals that the family will actually eat, and love! I generally take one type of meat each week, and plan my meals around it. I make a large roast beef, or a large chicken, or a large pan of hamburger meat, and then plan most of my meals around that one large piece of meat for several days. For example, I made spaghetti last night, and made enough sauce so that I can also make lasagna with it as well tonight. I like to cook once and eat twice. All your dishes looked so wonderful and I'm glad you shared with us :)

    1. You are welcome! I do something very similar to what you do when planning out our meals. I will also frequently make 2 of the same meals and then freeze one for later. The Dollar Tree has those aluminum pans with the lids that are perfect for freezing meals in. I have one of chili and rice in my freezer right now.

  6. It all looks so good! I enjoy looking at what other people are eating for dinner too. We tend to eat the same things over and over and we're pretty plain in our tastes. This week we had taco salad and chili dogs. This weekend we are making turkey, I'm trying out a slow cooker stuffing recipe, and other sides. I got a free turkey before Thanksgiving and it just takes up so much room in my freezer (I only have the one with the fridge), I'm wanting to clear out the space.

    1. Thanks Jess! I love turkey...we have one in our freezer also. My parents will be coming over for a visit within the next month so I am saving it for when they are here because I will have a huge crew to feed then with all my kids, grandkids and cousin coming over for at least a few meals.

  7. Debbie, I like making a big batch of whatever I'm making and freezing some for future meals. I use 3-cup rectangular glass containers to hold two portions of a main dish. Or use those same containers to each hold one complete meal of, say, meat, mashed potatoes and vegetable. Cuts down on takeout or eating out.

    1. Jean, it sounds like you and I think along the same lines. I am on the search for more glass containers at thrift stores to freeze things in. For now though, the aluminum pans at the Dollar Tree will have to do. :)
